It’s hard to fault the way the Czechs approach beer, and no surprise that they drink the most of it. From the abv (low) to the pours (foamy) to the sensory experience (ideal), it’s one of my favorite beer cultures. There’s a charming rusticity to their lagers, also – we tend to think of lager as an industrial product, scrubbed clean of all imperfections (and with it personality), but it doesn’t have to be that way. 

Inputs & Outputs celebrates the “little weirdsies” that make Czech-style beers so compelling. We used a combination of oddball pilsner malts, boiled part of the mash, fermented it extra cold, and hopped it with one variety you’ve probably never heard of and one you almost certainly forgot existed. It’s surprisingly big and bold for a little beer, and it begs for repeat consumption.
